Hmmmm....just sitting here thinking about what I am going to make for dinner. Hubby and I started working out and have been trying to eat healthy. I think I am going to make some lemon pepper tilapia with rice. Just curious of what some of your favorite dishes are....even recipes would be fun to share. :)
 
OK I'll give you one.

It a soup from the Olive Garden (a chain restaurant) called Zuppa Toscana
A cold winter day soup.

Ingredients.... 6 servings

1lb ground Italian sausage
1 tsp crushed red pepper
1 large diced white onion
4 tbsp bacon pieces-----brown separately, then add to onions
2 tsp garlic puree
10 cups of water
5 cubes of chicken bouillon
1 cup heavy cream
1 lb sliced Russet potatoes or about 3 large potatoes...med to wide slices
1/4 of a bunch of kale ---chop into small pieces

1. Sautee Italian sausage and crushed red pepper in pan.
Drain excess fat, refrigerate while you prepare the other ingredients.

2.In same pan, sautee bacon, onions and garlic for about 15 minutes or until onions are soft.

3. Mix together the chicken bouillon and water, then add it to the onions, bacon and garlic. Cook until boiling.

4. add potatoes and cook until soft, about an half hour.

5. Add heavy cream and cook until thoughouly heated.

6. Stir in the sausage.

7. Add the kale just before serving.

That's it!! My wife makes up a bunch ahead of time and freezes it .
 
Since you like fish, here's one to try,

place 1 jar salsa (your favorite, I use southwest garlic lovers salsa from safeway) into fry pan and bring to a simmer, take 1 pound Chile seabass , slice into approx 4 oz pieces, slide cbass into simmering salsa let cook until done (use 10 min an inch rule) serve over hot white rice yummy and quick.

Chile seabass works best because of the oil content in the fish, other seabasses I have used are corvina, blue nose, and stripped bass, but none have the same flavor as chile bass (AKA Patagonian Toothfish)

Asparagus that's actually edible:

1 bunch of Asparagus
2 tbs. of butter
1 tbs. of soy sauce
1 tsp. of balsamic vinegar
Salt & Pepper to taste

Preheat the oven to 400*. Arrange asparagus on a baking sheet. Melt the butter in the microwave, and then mix it with the soy sauce and vinegar. Poor it over the asparagus. Then cook the asparagus for 12 minutes.

When I first had it, it was just so good. Usually, I can't stand asparagus. Its just nasty, unless its cooked just right.
