can a pinky mouse be too big for a baby cornsnake, if so, what can I do?

the ones I have look a little big fo our snake, should he be able to handle it?

he's eaten before about a week ago, but that pinky looked smaller

Braining

I've read that you should chop the little pinkies heads off, if you think they are too big, or if your snake doesn't seem interested. this is called braining. I'm not sure what you should do if you think it is too large in girth. The snake should be able to handle it if the pinkie isn't much larger than the snake at its widest point.

You can cut a frozen pinky in half if you want (lengthwise) but you'd be surprised at how large a pinky the little suckers can eat. For info wise though, braining is actually where you poke a hole in the head to allow the brain to ooze out. Yucky but effective for some of them.
