Are there cable access ports available that I can add to a wooden Viv so that I can feed a plug from a heat mat and a thermostat probe through?

We have many options here for allowing probes or cord access through wooden sides or bottoms. I have drilled holes and used rubber grommets to seal around the cord and hole. But you need to research what is available in your area. Sometimes a computer shop, or electronics store has something that will work.
