Too large of prey

Will a corn snake attempt to eat a mouse that is "too large" for her?

Probably. Depends if you're describing something 5 grams too big or 40 grams too big.

You will be surprised at the size of a mouse a corn can swallow. Keeping it down is another matter, and a regurgitation is often the outcome.

Is there a general rule of thumb to follow for all snakes of just corns?

sure. a baby snake should be fed 10% to 13% of its body weight. That number gradually reduces as the snake ages, so that as an adult it will eat about 8% to 10% of its body weight. Also as a baby they are fed every 4 to 7 days, and by adulthood they are fed every 14 to 21 days.
