Pepper's right, there are a lot of factors that influence their behavior and each one is an individual. That said, there are some behavioral traits that seem to appear more often within certain morphs or family lines.
Caramel based morphs, especially Ambers have a reputation for being gentle and curious.
Sunkisseds are often thought to be touchy or temperamental.
Okeetees are said to behave as if they're in charge of things.
I'm sure you'll hear plenty more. IMHO, the "newer" a morph is, the more likely it is that behavioural traits could be linked to the morph. That's because certain traits (shyness, jumpiness, curiosity) are influenced to a degree by genetics and the genetics of different individuals are more similar when a morph is being developed than when the genes are widely dispersed in the population.
