Anyone know an easy Caribbean recipe that I could take to a work potluck tomorrow? We have themed potluck Saturday's...but I am at a loss on this one. (Plus, I'm not that into cooking :))

Ok, here's a good salad that's super easy to make and is always a hit. I don't use fresh though, too expensive...I get the frozen stuff but it's still awesome.

Here's another awesome one to use in your crock pot. If you're not much of a cooking person, you can ask at the meat counter where the pork loins are, but you'll find them in the meat case, they're long like a huge tube thing wrapped in sealed heavy plastic. Get one that has a good layer of fat on one side. This will cook off and make the pork literally fall apart. I've found that Kroger has the best ones. Are you near the new one in Noblesville? This is a breeze, and you can cook it tonight before you go to bed and it will be ready to go in the morning.

Caribean Jerk Chicken is good and easy. You can buy pre-mixed Jerk seasoning from your local supermarket. Super-tenderize the chicken, let it soak in oil and jerk seasonings for a couple hours, covered in the fridge, and throw it on the grill. After both sides are cooked, I like to sprinkle some of the seasoning on the top of the chicken and let it form a light crust. It also works well with a crust of almonds or walnuts.

Serve on a bed of lettuce with tomato slices, a few sprigs of cilantro, and lemon zest curls...
