Why would you want to skin the mouse? (Or rabbit). I think I've heard Janine say she used to give mice to her old dog. I'm pretty positive she gives them to her cats.
 
I knew an old german shepard who lived in an avocado grove where my band used to practice. He was a fat happy dog who ate mostly avos and gophers which he could catch quite well. I watched him eat one once, no fuss, just crunch crunch crunch and it was gone.
I don't know that the fur would hurt any, but I'm sure it's not digestible. If anything keeping the skin on would give a little more fat. Too bad it's so hard to pluck a mouse.

What a great thread! Ellie used to take advantage if the cats stole a thawing mouse or two, so I don't intentionally give them mice, they steal them!
The cats love raw chicken wings and oily fish such as herrings.
Rosie my baby lurcher is on a total raw diet, I started her on chicken wings the day after I got her home, now she'll have a lamb neck, lamb's hearts or a slice of cow heart, chops, kidneys, liver, rabbit or chicken portons. She doesn't like fish much, and I tried a frozen minced tripe/meat/bone mix but it really upset her stomach. I don't think she's managed to get a mouse yet, but generations of terrier in her mean it's only a matter of time!
