Phase change shipping hot/cold packs question?

I'm not quite sure how to phrase my question but here goes and hopefully everyone understands what I'm actually asking.

I've been looking into the various phase change heat/cooling shipping packs and panels like the Phase 22 panels at Josh's Frogs and some of the Cryo Paks that other supply stores sell. Does anyone have a clear, easy to understand tutorial on how these work? I don't really understand how to compare the various types to decide which are the best for my needs.
And I'd be happy for any recommendations on where to buy them that anyone has as well.

I use the TCP Reliable Phase 22 panels from Josh's Frogs. I have ordered a case directly from the company, and have contact info if you need it. I also tried the little soft packs. They leak, sometimes, and if just one in a case of 50 leaks, they all smell and get sticky and it doesn't wash off and it doesn't wash off your hands- no thanks. Plus, they are soooo small.

The "panels," which are hard plastic squares with the PCM inside, are really nice.

To use them, if you want to keep the animal warm, you heat the panel to 90F or so, in hot water. It will then gradually change back to 72F and stay there.

If you want to keep the animal cool, you freeze the pack, and then it will gradually change back to 72F and stay there.

I wouldn't use these for a general heat sink/temp stabilizer in neutral weather- I'd use a big gel pack for that. That's pretty rare, to find perfect conditions in all three places.
