Recipes- healthy, unhealthy, fast, slow...

My goodness... I know so many different dishes that I don't know where to start! I absolutely love to cook, and not to toot my own horn or anything, but I am just fantastic at it. I cook just about every night for my boys... if I didn't they'd have to resort to Mac n' Cheese or Ramen noodles lol. It works out for me though... I thoroughly enjoy cooking for people. Its almost as therapeutic as cleaning!

How about we start with me asking what your favorite kind of dish is? That might help narrow it down a bit. :)
 
This is a fairly cheap meal, i'm planning to use this recipe in college :p.

1 pack of roman noodles
1 boiled egg
and soy sauce.

After you make you're roman, just cut the boiled egg in two and put inside of roman, then add as much soy sauce on the egg or in the noodles.
 
You can also just crack the egg and drop it in when you boil the Ramen noodles in water too. Just make sure you stir it up really well, and you have psuedo egg-drop Ramen noodle soup. In my eyes, thats the only way to make Ramen!
 
I may have to try that, but I will always love my boiled eggs.
Actually, I pretty much love eating eggs in general.
 
If you like Andes mints, these are cookies you'll love. I love making these, and I really need to make some soon!

Ingredients:
1/2 c. softened salted butter (I use unsalted, and it doesn't really affect anything.)
3/4 c. dark brown sugar
1/2 c. white sugar
1 tsp. baking soda
1 tsp. baking powder
2 tsp. vanilla extract
2 eggs
1 package of Andes Mint baking chips, or 10 ounces of Andes mints, chopped
2 2/3 c. sifted all-purpose flour

Directions:
Preheat the oven to 350° F (by my conversion, that would be 176° C, though I could be wrong. LOL)
Cream the butter and sugars together. Once they are mixed well, add in the baking soda, baking powder, vanilla, and eggs and mix well. Once they are mixed in, add the Andes mints and the flour.
Chill in the refrigerator for at least 1 hour.
Measure out approximately 1 ounce of dough, and form it into balls and slightly flatten the top with your finger or a utensil of your choosing.
Put the pan in the middle rack of your oven, and bake for approximately 8-10 minutes. Cool and remove to a cooling rack before serving.

This yields about 4 dozen cookies depending on how big you make them. :)
They are SO delicious! And i'm sure they're bad for you. I've got other cookie recipes that i'll be sure to share with you guys. :)
 
I recently tried out this recipe for Cake Truffles. They are very versatile, and you can alter it in to fit your taste!

1 boxed cake mix of your choice (cook as directed on box in any sized pan)
1 can cream cheese frosting (16 oz.)
1 package chocolate (regular or white chocolate)
wax paper

1. After cake is cooked and cooled completely, crumble into large bowl.
2. Mix thoroughly with 1 can cream cheese frosting. (It's easier to use your fingers to mix together, but be warned it will get messy.)
3. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50. You can get even more if you use a mini ice cream scooper, but I like to hand roll them.)
4. Chill for several hours. (You can speed this up by putting in the freezer.)
5. Melt chocolate in microwave or over a double boiler.
6. Roll balls in chocolate and lay on wax paper until firm. (Use a spoon to dip and roll in chocolate and then tap off extra.)
 
Made an oldy but goodie tonight. Very economically friendly. I'm usually into cooking really gourmet stuff but I love this one from my husbands family.

Hamburger Spinich Rice.

Start a pot of steamed white rice.

Cook about 1 1/2 lbs hamburger meat and add some Lowery's seasoned salt. You can add some sliced button mushrooms if you like them. While this is cooking, thaw out a frozen package of chopped spinich in the microwave. When meat and mushrooms are almost done, add spinich. Once everything is heated through out, add a beaten egg or two and stir to coat the meat and then leave in long enough just to get the egg cooked. You don't really want chunks of egg so stir it good over not too high heat. It just helps stuff stick together. Add more Lowery's if it needs it and serve over rice with sour cream. Yep, sour cream. Everyone (including myself) thinks it's bizzare at first but it's really good!
 
I've never heard of that before, Carol! I'll have to try it out once I get settled in Japan!!
