I've recently acquired a new addition to my collection. He's terrified of me and tries to bolt every time I open the lid on his box. Although this is a bit frustrating for me, it seems to have stressed this little guy out so much that he has stopped eating. What would your advice be?

Let him be, just let him sit in his own environment without be messed with for a week, he's stressed and you need to let him get a grip and get a comfy feel.

When I got him I could understand that he was a bit nervous. I left him alone for a few days and gave him his first meal with me which after a little bit of encouragement he took down. Now a week later he's a nervous wreck. Ill let him be for a week only bothering him to change his water. Its been 7 days since he last ate so not too long and ill try him with another pinky in a week or so.

Ok going by the clues left in your posts :)
" ill try him with another pinky in a week or so." He's a hatchling to 3 months ?

"every time I open the lid on his box" He's in a rack system or he's really n a box/sterlite ?
"I left him alone for a few days" you've had him for a week or so?
Check the temps and make sure you are not overheating him.
As Frogman said and I preach with new arrivals. Keep the stress level as low as possible.
Some snakes ( I assume it's a corn ) are spazzes while others are calm. You will learn your snakes personality in time.
Temps and stress play a big part in how your snake acts and they all definitely have their own personality.
Good luck with him and check the basics :)

He's about 2 1/2 months old at a guess. I have a vivarium which is properly set up with all the right equipment i.e heat source and thermometer and a system that controls temperature. I have 5 babies in there in individual rubs. the other 4 are fine but this one is mental.

Well you might have called it right. He might be just mental Ha-ha
I have a 4 month old king snake that whacks his head against his tub over and over when I enter the room till I leave but when I take him out he has never bit and is calm in my hand. I'd call him mental !! :shrugs:

I dont mind if he is a bit quick and feisty. Im more worried about him going off of his food.

I understand your concern.
I wouldn't worry just yet. It that time of year a lot of snakes go off feed.
I personally have 4 or 5 that have skipped a meal or two do to the change in seasons.
