To fit most of your qualifications (inexpensive, a good learning project, get something different in the first generation than what the parents are)...I would get a normal het snow (het for both amelanism and anerythrism) and breed it to a snow. The resulting offspring would be 25% normal & 25% snow (like the parents) and 25% amelanistic & 25% anerythristic (totally different from the parents). If you were willing to spend a little more money, stay with the same color morphs I've mentioned, but make one parent motley and the other het motley. This will add even more variety in the offspring...50% of each color morph will also be motley patterned.
