So when my 7 month old corn snake started going into shed, it took him like a week to shed it, it took him forever and his last shed was 18 and half inches and then this shed he's was 21 inches!

Congrats on the good shed.
Unfortunately, measuring sheds isn't at all reliable. They stretch out, and always to a different extent, so it won't give you any accurate idea of the snake's length. I'm sure there have been cases where one skin has been shorter than the one before it, just because it didn't stretch as much when the snake was shedding it off.
