Whenever I go to pick up Leeroy he just darts under the substrates and burrows. I want to start handling him regularly but I don't want to stress him out too much. Should I just be quick and grab him or should I wait until he is more comfortable with me. BTW I just got him on Saturday.

No, you should not be quick, that will scare him. Slowly reach your hand in and let him wander to you if he is out or pick up the hide and gently pick him up. A few short handlings everyday should get him used to you. Good luck!

I would scoop him up anyway. The snake's going on survival instinct. I'll use Nagini as an example. When he was little he was very skittish. When I went to pick him up he'd strike, rattle, and try to hide. As soon as I had him in my hands he was as cool as a cucumber. He is my most relaxed snake now. I can even pose him for pictures :p. I found with Nagini it was easier to scoop him up before he realised what was going on. He was fine in my hands, just didn't like being picked up. I hope this helps!
 
My corn Toulouse is the same way; he tends to be a bit racey when he sees me reach down for him, and then even moving his hides out of the place gives him nowhere to go, so he just sits and tests the air with his tongue, and I have to get a finger under his neck and just scoop him up. But once he's in hand, he's a mellow little guy.

Some recommend you don't handle your new snake for at least three days or so in order to let him acclimate to his environment. I've also heard of people waiting a week before handling. Slow movements and patience are good advice. :)
 
my snake colin loves being handled, as soon as i got him he was passed round friends and family for a play, he gets a bit grumpy when he's about to shed but i generally just mist him that week so he sheds in one go, i think with snakes the secret is nothing amazing its just regular confident handling and time so your snake can build its trust for you.
