My corn snake hasn't eaten for about 3 weeks, he is just lying under his log and not moving, usually he's out like a rocket as soon as he smells the mouse, the last mice he had was a little bit bigger than the ones he had before but he seemed to manage it no problem at all

is this normal or should i be worried ??

have you noticed any oddities in his stool or possibly a regurge? what are the temps you have in the tank, hot and cold?

It's very normal for Corns to go for periods without eating. Many factors cause it, and you will feel like pulling your hair out. The idea is not to go too crazy while it's going on. You have time and it's more than you think. Some of the things that cause it is shedding, temps that are a little off (too warm or cool), over handling, stress, illness or injury. Other times it's just indeterminable.

One main bit of advice is do not stress the snake, trying to make it eat. If he eats normally on Sundays, then try to feed him only on Sundays. That means if he doesn't eat this Sunday, don't try again, till next Sunday.

On these days you try, mix up your methods a bit. For the first few times, try the regular method.

If it's a F/T, then do that. Then try making the pinkie extra warm, scenting with something like tuna juice.
Try a fresh pink that is either fresh killed or live
Try leaving the pink with the snake all night. You can place it in a well vented Tupperware container or paper bag. Put it back in its viv overnight and leave it be.
Try braining the pinkie (Thats cutting a slit into it's head, just prior to feeding)

Hope that helps!!
