JUST THIS MINUTE my cornsnake *9 months* shed its skin!!!
at first his head was falky and i thought ' well it'll take him a couple of days for all that to come off'
but he suddnely just JUMPED out of it!!!
1) is it ok to handle them straight after they shed or is it better to leave them for a couple of days!??:D

You can handle them right after they've shed. While they're in the shed process but haven't yet shed their skin, that's when you should leave them alone. You'll notice their eyes go milky or bluish several days before they shed. They'll stay that way for a few days perhaps, then clear up. A few days later, they shed. Corns tend to be more nervous and sometimes a little nippy in this period, probably because they can't see very well. I like to leave mine alone during this time, except to take him to a bath. :)

It is ok to handle straight after a shed but they can be a bit jumpy, whether it make's them a bit sore or sensitive I don't know. You will need to check that the spectacle's (eye cap's) have come of and the tail end as well because these can cause problem's if left on, also any other bit's that have stuck. Great watching them isn't it.
