Sudden Behavior Change

Hello all. I posted here a while back about my rescued 2.5' amel corn. She's been very sweet, calm, etc. Eating well, no issues.

Well recently, her entire behavior has taken a massive change. During her last shed, I went in to check on her and she was tapping her tail rapidly on the substrate. I figured she was just nervous since she was in shed, and left her alone. Well that was over 2 weeks ago, and she's still flighty and nervous. She's still doing the tail thing and anytime I touch her she bolts across the tank.

I'm curious as to what could be causing such a sudden behavioral switch. I haven't made any changes to her tank, she's been feeding once a week, etc. I am stumped. Any help is greatly appreciated!
