Thermostat/thermometer help!

I have two racks. One is home made and set up with heat tape, which the tubs rest directly on. The other is a CB70 rack with heat cable, which the tubs sit a good 2" off the cable.

I have a zilla thermostat rated for 1000 watts. I also have a zilla thermometer with probe and a zoomed temp gun.

I'm having trouble getting the right temps in both racks. It seems the heat cable might run a bit cooler then the tape, or maybe it's just because the tubs in the good rack sit a couple inches off the cable.

Now for my dilemma(s). Someone please help me!

1. Where do I place the probe for the thermostat and thermometer. Do I place it inside the tubs, or resting on the heat tape/cable?

2. Can I run both heat tape and cable for the two racks off of the same thermostat?

3. I have my thermostat set at about 86, but both my thermometers read differently. The one with probe reads lower, and the temp gun reads higher.

4. Are my thermostat an thermometers all junk, an I need to invest in some of the spendier ones?
