Fist off, is handling my snake everyday okay or have I been handling her too much. She seems very calm when I handle her. Also, is it a good or bad idea to let her climb around my neck and shoulders?
 
How old is the snake, how long have you had it, and when did it eat last?

Around the head is fine, but you slip up when she is around your neck and she accidentally digs her venomous spines in, you may die.

She is an adult oketee corn and I don't hold her for at least a day or two after she eats.

Is it stressful to the snake to let her climb around my neck and shoulders?
 
No it is OK if you are comfortable with it. Snakes have been known to poo and pee on their owner. I know this from personal experience. So you take a shower and wash clothes. Some people don't like to do it, but it won't hurt you.
