Incubator construction advise please :)

I'm sure this is a repeated topic in this forum, but I'm starting yet another incubator thread. After reading about horrible experiences with reptipro 5000 (and identical) commercial incubators, I decided to go the DIY route. However, it will be in my home, I want it to look nice, and I want a glass door because I'm nosy and would probably open the door to peek too often. I am making an incubator out of a lockable 16-bottle wine chiller that is 18x18x18 with a glass front door. With four little children, a few cats, and two dogs in the house, I need something more secure than a hovabator haha. I am deciding between flexwatt and heat cable on the back wall. Any suggestions, and why? I'm assuming installing a lot of heat is better than not enough, seeing as the thermostat will control the output. Also, is a fan necessary to circulate the heat evenly, or is that just a paranoid precaution? I am going to be using a Herpstat, if that matters for either of my questions. Your input would be greatly appreciated!
