Press the button at the bottom of that person's message that says "Quote" and their message will automatically be quoted. You can then delete the irrelevant parts and keep the parts you wanted to quote.

Also, you can use the vB Code button to quote stuff... press the "quote" button while you're making your reply. But first, select the text you wish to quote and then right-click and select "copy" so that you can paste it into the box that pops up. :)
