These are old pictures, i'm waiting for the time to upload some new ones onto photobucket. Anyways, this is Brooke about a month ago;

I've noticed she wont eat in the open, I doubt in the wild she would've eaten her food in an exposed place but she just has to drag her food off of her plastic lid, through her substrate, (in the process of trying to ditch the soil & use aspen) until she can get behind her favourite plastic plant to munch it so quick it doesn't touch the sides. On the lucky days where she gets offered two, she'll go back and do the same thing with the other pinky, im gonna place the pinky behind a plant next time & She isn't swallowing enough substrate to do any harm but is she just a nervous eater?Or does she just not like an audience?

I think you answered your own question. ;)

I would place her in a deli cup (or something analogous) and put it in a paper bag to give her somewhere dark to eat rather than letting her drag it through the soil. Or, you could place a small paper plate with the mouse on it under her favorite plant to begin with.
 
She's darling, and I love your thumb ring. I used to have one exactly like it.

Don't worry about her not wanting an audience... some of mine are exactly the same way.
