Hey everyone

I'm a vegetarian, and I was wondering if any of you are too. If so, I thought this would be a good thread to share ideas, recipes and opinions. Tonight I'm having a green vegetable risotto, I found the recipe in Delia Smith's vegetarian cook book, called Risotto Verde.

I can share the recipe, amongst others if you'd like. I've got about 3 vegetarian cook books. :)

Hey, I'm not a member of PETA or something, and I won't come and burn your house down because you eat meat. Everyone's entitled to their own opinion and lifestyle, and I'm not gonna judge or argue with you because of it either. :)

I eat fish (which I don't think is a true meat but everyone else does) and I do eat chicken when my mother makes me.
I tried tofu once and I almost threw up... bleh. I'm trying, though.

Yeah sure, it counts. Just let us know about what you eat in the way of vegetarian meals. I don't eat fish or any meat, but I'll eat cheese, and eggs, and have milk. I'm not a vegan. Being a vegan can be detrimental to your health, and I'll pass on that.
 
I was once, I'm not anymore.
But I can share a great recipe if you like beets (and as long as you aren't a vegan, though you could leave out the cheese.)

This is my beet salad I eat pretty often. Some days I just skip meat (especially at lunch) just so I won't feel like I'm dragging at work.

Can of sliced shoestring beets drained
Grapes sliced in halves (about one third to one half as much volume as I use beets)
Pine nuts sprinkled on to taste (as much as you like)..
Add a splash of balsamic vinegar and top with a little fresh goat cheese..

Good stuff.

Another thing that's pretty good with lots of vegetables (Squashes, root vegetables, asparagus, yams, and fresh brussels sprouts are my favorite with this preparation) is to take the vegetable (cut them up if they are really large like with the squash) drizzle with olive oil, add some chopped garlic and a good ammount of kosher salt and black pepper, place them in a roasting pan and into a really hot oven.
Cook them just long enough that they get some real color on, but if the oven's hot enough they won't be over done even if they look it. Takes some practice but it's worth it..

Yum. I'm hungry now..
 
Oh yeah, and ever since the year I spent in Korea- Kimchee soup is a favorite of mine- though some kimchee has fish paste in it..
 
I'm semi-addicted on black olives, I get through a couple of cans a week.
Tonight I was feeling lazy so I had a prepared mixed leaf salad full of chopped black olives, used pesto as a dressing and smothered it in parmesan :) cooked 4-cheese pizzas for the boys and customised mine with lots more olives

Tom, I'm not a vegan, so cheese is fine :) Nice recipes there, why did you switch back? Did you miss meat? Have you ever tried the meat substitutes, like Quorn? I don't know if you get it over there though, but I'm sure there's an equivilant.

Janine, that sounds nice too! I've never been a huge fan of olives, but I do enjoy the black ones from time to time, especially on pizza.
 
Just out of curiosity...how do you feel about feeding your snakes mice and having them in the freezer? I understand that you probabaly can't blame the snake for what they have to eat, but I am a bit surprised you would want them in your household. Just curious.
I am a huge lover of the cooked flesh, but I do have a great recipe for pineapple cassarole. It's a side dish. and I will try to add it here later tonight.

Snakes are not humans, and I'm not like that PETA woman who starved her dog to eat vegetables because she wouldn't allow him to eat meat. I accept and love snakes for what they are, and find it fascinating the way they eat, move etc.

Besides, we still have meat in our freezer. My Mum isn't a vegetarian.

I think back when I didn't know how to cook meat well, it was too easy to pass on it. But after culinary school, I don't think I could ever agree there was anything close to a substitute... I'd never eat a beet "substitute" any more than I would try to find one for prime rib, lol. Or a substitute for some nice seared ahi, no way..

But I have a sense of pride for what I believed and for my dedication back in the days that I was a young vegan punk rocker, lol. I think it is VERY important that we THINK about what we eat, and take control of that however we do. Governmental standards are bad and getting worse, and ultimately our health is ours and therefore is our own responsibility..

Even while I say all this, I've been the worst over this last year for just jamming burgers into my face without thought. I've been busy and that's my excuse, but I am trying to treat my stomach right lately. Not only is my prepared food better for me but it tastes better, so that's what I'm trying to keep up on. I never count calories, just try to eat wholesome natural foods. Fruit, meat, and veggies..

I don't eat much, really, and I don't have many recipes, either. I live off of nutrition bars, salads and those yummy veggie wraps from Starbucks. And the occasional, like said before, fish or chicken. There have been days where I just had 1 bar and water and I didn't feel hungry. :shrugs: Yeah, I know, I'm unhealthy... but enough 'bout me...
 
I'm not a vegetarian but I don't eat much meat and I never eat fish. No real ethical reasons behind it... I just don't much like the taste and I can't eat fish as I have a weird and irrational phobia of fish bones. It frightens me to eat it, even after I've searched the bit of fish so thoroughly you couldn't hide a bread crumb in there. I know, I'm weird. :confused:

I particularly like fruit snacks. You can get these dried pineapple dice in Julian Graves and they are FABULOUS.
 
I was a vegetarian for 6 years until about a year ago. I began eating seafood again...then I ate some chicken... and then beef... and it all spiraled out of control. I just recently made the transition back to vegetarianism. I had to... my digestive system cannot handle meat at all. It's odd. If I eat meat, I get terrible heartburn... but if I skip the meat, I'm fine.

I tend to like raw veggies better than cooked veggies, so many of the things I make at home are raw dishes.

One of my favorite snakes is to take some pita, spread humus on it, cover the humus in fresh baby spinach leaves, sprinkle with feta, throw a couple black olives on, and roll up the pita. MMMMmmmmm.

The real key for me in being a vegetarian is finding interesting flavor combinations, just to keep things from getting boring. A friend of mine from Laos always used to offer me sour green apples, dipped in crushed hot dried peppers (try habeneros or serranos) which have been mixed into grapeseed or peanut oil. Sounds crazy, right? The combination of sour and spicy hot has become one of my favorites.

I'm a huge fan of tofu, but I try to limit my tofu intake, as it can be harmful to you if it becomes the staple in your diet. I prefer tempeh in place of tofu.

I also love couscous mixed with a little tiny bit of harisa. Here's a recipe for harisa...If you're into North African cuisine, harisa is a must have :

2 ounces dried Guajillo chiles

2 ounces dried de arbol chiles or any dried finger-type chile

5 large garlic cloves

2 tablespoons water

2 tablespoons extra-virgin olive oil and more for topping off

1/2 teaspoon freshly ground caraway seeds

1/4 teaspoon freshly ground coriander seeds

1 1/2 teaspoons salt

1. Soak the peppers in tepid water to cover until softened, about 45 minutes to 1 hour . Drain and remove the stems and seeds. Place in a blender or food processor with the garlic, water, and olive oil and process until smooth, stopping occasionally to scrape down the sides.

2. Transfer the mixture to a small bowl and stir in the caraway, coriander, and salt. Store in a jar and top off, covering the surface of the paste with a layer of olive oil. Whenever the paste is used you must always top off with olive oil making sure no paste is exposed to air otherwise it will spoil.

How is a fish - an animal with a central nervous system, a backbone, a recogniseable face and the ability to feel pain - any less an animal (and thus any less 'meat') than a cow? I'd say you don't eat red meat; you're not anything like a vegetarian if you eat animals.

I'm not a veggie - if for no other reason than because my digestive system can't cope with the grains required to get enough protein on a vegetarian diet. I don't eat much red meat either if I'm honest.

As for tofu, not the nicest stuff. I do occasionally eat TVP mince (the dried kibble you rehydrate) instead of meat - it's easier to store and cheaper. Only problem is that, though I don't mind soy, my intestines do!

Spaghetti mock-bolognaise with TVP mince and sauteed onions is good, though!

You're right, they do feel pain an all I just don't see them as "meat", but just plain ol' fish. I see myself as a half vegetarian because I don't eat red meat, and I'm trying not to eat meat at all. I never actually said I am one; so, just chill.

When I visit my chap, it's what I take for the 6 hour journey. He's got used me turning up with stinky coriander breath kisses!
