How important is it to NOT use aluminum tape to secure the probes? It's all I have on hand at the moment but if it's a problem I can go pick up something else.

If the tape comes loose and the snake comes in contact it can be very hard and damaging to the snake to get off.

The probes should have a suction cup, I have found them to work well or place a heavy rock on it. Another solution is to use Velcro, soft side up and cut the hook side just slightly smaller than the loops so it won't scratch the snake.
 
If you're using the heavy aluminum tape, you can use it in a 1" strip, leaving most of the actual probe out, and just taping the wire tightly behind it. The heavy aluminum tape sticks well once, but when it comes off, it's pretty much done sticking. Just keep an eye on it.
 
Awesome that's what I did. I just taped the t-stat and thermometer probe wires together and the taped the wires to the glass.
