Hey Sean, let me first tell you welcome to the forums. (Have not seen you around before). For your first question, feces should consist of solid brownish-black masses along with some yellowish fluids, and sometimes clear fluid too. Looking at the snake, its for sure an amel (or also called albino). This one will sure be a looker as an adult, due to the bright colors its expressing as a youngin'.
Also, as noted before, you probably should not be handling your snake right now. This is because corn snakes are very easy to stress out, just like humans. The snake just made a move, from one home to another, and that itself can make a young corn snake scared/stressed. Remember, as of right now, the corn thinks that you are a giant predator.
So for right now you shouldn't handle the snake, you should leave it alone for atleast 5 to 7 days, atleast 5 before you attempt to feed.
I suggest you also read some care sheets and get a few books, Kathy Love posts on this forum, but also has a wonderful book called "Corn Snakes, The Comprehensive Owner's Guide." This book is a wonderful resource that most of us who have been at it for a long time still reference too.
