Recipe: Stir-Fried Chicken Curry

1 whole chicken breast, sliced thinly
1/3 can coconut milk
3 tbsp red or green curry paste
3 tbsp palm sugar (sub brown sugar)
3 tbsp fish sauce
vegatables such as carrots, turnips, potatoes, peppers

Boil chopped vegatables until ready to use

Warm coconut milk in wok, add curry paste, stirring briskly until it becomes aromatic

Add chicken and stir fry until it just begins to change color

Add remaining ingredients, stir fry until chicken is cooked

Serve with rice or noodles
 
Now you've made my mouth water and I have no chicken in the fridge!!! Oh and it's also 4am here....tee hee ;)

Do you think this would be as good if I left out the sugar, or maybe I should use a sugar substitute? What about some tomatoes for natural sweetness?
 
I wonder what you could use instead. The fish sauce is pretty sweet...So is the coconut milk. I think tomatoes might change the whole thing. Maybe pineapple?
 
Hmm, well with baking I've been using Splenda sugar substitute, so I could try that, or if as you say the fish sauce and coconut milk are already sweet then I may get away without using anything else. I'll let you know what I come up with :)
