I made these cupcakes tonight.. they were awesome!


Paleo Chocolate Cupcakes

Yields15

These are a little denser than your average cupcake but they taste delicious and have no refined sugar, no dairy, no gluten and no grain!

Cupcakes

1/2 cup coconut flour1/2 cup cacao powder1/2 teaspoon sea salt1/2 teaspoon baking soda8 large pastured eggs1/2 cup coconut oil2/3 cup raw honey1 teaspoon vanilla extract

Frosting

1 cup high cocoa % chocolate chips (70% or greater)1/2 cup coconut oil1/3 cup raw honey1 tablespoon vanilla extract

Cupcakes

Preheat oven to 350 degrees FLine muffin pans with paper linersMix dry ingredients together in a large bowlMelt coconut oil and honey in a sauce pan on the stoveMix eggs and vanilla in a bowl and beat wellSlowly add the honey and coconut oil mixture to the egg mixtureOnce the wet ingredients are mixed, slowly add them to the dry ingredients while beating with a mixerPour batter into lined muffin tinsBake for 16-19 minutes or until a toothpick comes out dry

Frosting

In a saucepan over very low heat, melt chocolate, coconut oil and honey togetherStir in vanilla extractTransfer to mixing bowl and place frosting in refrigerator for 10-15 minutes to thickenRemove from refrigerator and whip frosting with a hand blender until thick and fluffyUse a spatula to frost the cupcakes!
 
Ok the meats are easy... does anyone have any really creative veggie recipes?

I made zuchini noodles and marinara sauce and meatballs the other night. I was totally impressed it was awesomely delicious.

I also have been experimenting making caulifower into a rice substitute and that was really good too.
 
For veggies we eat a lot of sweet potatoes. Basically we just mix garlic, onion, enter veggie here and cook it all in better with a bit of seasoning and salt. That ends up being most of our sides.

There's also bacon wrapped asparagus that's good. When it's grilling season (not year round here in Wisconsin) just about any veggie is great on the grill.
 
I read Sweet potatoes aren't technically paleo and if so to eat them sparingly. Salt pepper garlic gets boring.. lol.

I'm gonna make some butternut squash soup with home made chicken stock Friday.

Does anyone have any good soup recipes? Soups make great creative side dishes.

Yeah we have been primal for almost a year now so we have added things like potatoes back in.

Here's another soup recipe I have tried. It came out really good

Artichoke Soup

A friend of mine saves bacon grease and uses it to cook veggies. It's great with brussel sprouts.

Kale chips are also yummy

Do you like duck at all? I love to roast a duck on the weekend. It's so tasty
 
I haven't tried duck or lamb or bison so I need to start trying to prepare more interesting meats!

And yes we save bacon grease and are using it for seasoning veggies. Mmmmmmm.

If you like mushrooms, we use to get some white mushrooms and cook them in a sauce pan with rosemary and basil. Very tasty
 
If you have a Whole Foods by you, they have bison. I love it, especially a roast.

And I've eaten lamb my whole life. LOVE it, in all forms!

Wet Ingredients:

5large eggs
1/3 cup melted unsalted butter, (you can also use coconut oil or ghee if you prefer)
3/4cup maple syrup or honey
1teaspoon vanilla extract
2 tablespoons milk (or coconut milk)

Procedure:
1. Preheat your oven at 350 deg F.
2. Whisk together the dry ingredients until thoroughly mixed. Set aside.
3. In a separate bowl, blend together the wet ingredients using your mixer.
4. Combine the wet and dry ingredients together using your mixer until they are well blended.
5. Line a baking pan with parchment paper or grease it if you prefer and pour all the batter. Bake at 25 minutes.
