I thought the UV was to help the snake digest better and to enhance their coloring? I was aware that the snakes can do without the UV but was told that it did help the snake.

Nope. Corn snakes are crepuscular so UV light is pretty worthless. As Cav said, it neither aids in digestions or enhances coloration, to my knowledge. I've never seen anything posted that says that.
