I know that corns are supposed to eat almost exclusively mice, but are there other things that I can offer?
I was wondering about small lizards (such as anoles) fish (such as guppies or mollies) and chicks or eggs when they're bigger. Are there any foods that aren't rodents that are acceptable?
Also, I've read conflicting reports on when to feed my hatchling. Should she be fed every three or four days or once a week?

Not eggs or fish, but anoles & chicks are OK. Provisos are that wild-caught anoles can be carrying parasites that could pass to your Corn. Captive-bred anoles are an expensive treat and you'll be in a hole if your Corn takes a shine to them and decides to refuse mice afterwards. Chicks are OK, but they produce the stinkiest poop you'll ever experience!

Alternatives to mice aren't necessary - Corns don't get "bored" with food and they get all the nutrition they need from mice.

I feed hatchlings every 4-5 days. Once a week is heading towards a maintenance diet which will probably slow growth.

Let's see....even though snakes can eat lizards, lizards can transmit parasites and the snake may not want anything else after eating lizards.
Fish are not good at all, they do not meet a corn snake's nutritional needs.
Snakes won't eat eggs, at least I don't think they will.
Chicks are ok for a change of pace, but I have read that chicks make for stinky poop and a snake that might not go back to mice.

I would just stick to f/t mice if I were you. They are inexpensive, easy to acquire, easy to prepare and nutritionally complete.
 
I occasionally offer my corns and rat snakes quail. Quail has signifcantly less fat than mice. If you do have an obese snake stop feeding mice and start them on a diet of quail and they will loose weight. I know Guyer feeds his mice, rats, chicks, and quail
 
Actually, I have just started adding in rat pups every 4th meal or so, just for variety sake. They are working great on fattening up my female who double clutched this year.
 
The only thing I have against variety is, what if they get stuck on it and don't go back to mice. This probably isn't a common thing, but it's just the way I think I guess. Snakes don't need a variety, but I'd suggest maybe rats of equal size to the mice you usually feed. :)
 
Well I have only experienced that once but it was that my Ghost Corn hates rats but loves mice and birds so she got stuck on birds when I only had rats and birds
 
some snakes eat eggs whole. but not corns. they could eat other snakes, mice, rats, anoles, chicks. idk if i would switch off of what is readily available though.
