Actually, unless she's in shed and really grumpy, the best thing you could do when she goes defensive, its pick her up. She's trying to scare you, and the more it works, the more she's going to do it every time you want to get her. Eventually she will learn you aren't going to eat her and she will calm down. Or not, some corns stay ornery "in cage" their whole lives, but are quite docile once out and about.I'm a little scared to pick her up she goes into "S position" everytime I go to pick her up.

lol, Sometimes I think my Tatu was switched at birth! She's one of those incredibly lazy snakes that you wouldn't think was alive until you poke her (I don't poke her, but you get the picture). She's the only one I've got that hasn't ever tried to scare me. Like ever. Apollo, on the other hand, was a ferocious monster that did nothing but puff up and continuously strike for almost a month before realizing that no one was afraid of a 10-inch long albino worm! Now he's almost as calm as Tatu (no one else can even come close to her laziness!) and never strikes or even looks up half of the time.
They all calm down eventually!
